Description

When preparing school meals, it is essential to consider several factors: the quality of raw materials, the available kitchen equipment, and the purpose behind the meal. In this masterclass, we will focus on legumes and how to prepare them in ways that make them appealing and familiar to children!

Legumes are not commonly used in school menus, but they have great potential, especially in the autumn season when they are rich in vitamins and minerals. One reason they are not widely incorporated is the lack of proper kitchen equipment. From previous masterclasses, we have seen that many school kitchens are often under-equipped.

Today’s masterclass will cover the following topics:

  • Olga Ä»ubina, LDUSA - will introduce school chefs to various types of legumes and demonstrate different recipes to make them more appealing.
  • Ina Poliscenko, Chef, GEMOSS - will showcase the latest professional kitchen equipment, explaining the benefits and providing guidance on how to use them effectively.
  • School chefs will also participate in a hands-on session led by Chef Ina, where they will prepare a three-course meal using legumes.
