The programme began in Simrishamn, where the focus was on product development. Pilot teams presented a diverse range of round goby-based products aimed at different consumer groups, offering practical insights into both the technical challenges and creative possibilities of processing this underutilised species. Participants also enjoyed a tasting session featuring innovative round goby dishes. The day concluded with visits to Skillinge Fisk-Impex AB and Rosbergs Fisk on Österlen, where attendees gained first-hand knowledge of processing techniques and the role of industry partners in advancing the value chain.

A live-streamed demonstration allowed participants to observe the harvesting process in real time. The day concluded with a workshop exploring the broader potential for round goby fisheries and consumption across the Baltic Sea Region.

The final day brought partners together for an internal meeting, focusing on priorities for the project’s final six months and identifying opportunities to build on current achievements through future collaboration.

The event highlighted the importance of cooperation, innovation, and shared knowledge in unlocking the full potential of round goby as a sustainable resource.
