Showcasing Round Goby at Nordic Seafood Summit

One of the most important annual gatherings for the Swedish seafood sector, the summit brings together all kinds of stakeholders from fisheries, food industry and policy. With this year’s spotlight on the restaurant industry, it turned out to be the perfect place to put this small but promising fish on the menu.
The RoundGoby project was there with a clear mission: to show that this often-overlooked species can become a valuable and sustainable seafood product. By connecting fishers, businesses and chefs, the project aims to turn an underused resource into a new market opportunity.
And what better way to start the conversation than through food? At the booth, visitors were invited to taste a range of creative round goby dishes prepared by project partners Kalmar Municipality, Rosbergs Fisk, Skillinge Fisk-Impex AB and Marint centrum. Curious visitors lined up to sample a refreshing round goby ceviche by Rosbergs Fisk and a delicate round goby terrine presented by Kalmar Municipality, both proving that this small coastal fish has big culinary potential.
Round goby also made an appearance at the side event “Tasting innovative food for public kitchens”. Chefs from Kalmar served their well-loved Land & Sea Balls and another chef gave a creative twist to the Swedish classic Wallenbergare, this time made with round goby.
The strong interest from visitors showed that people are ready to discover new seafood options. By bringing round goby to events like the Nordic Seafood Summit, the project continues to spark curiosity, open new market possibilities and move one step closer to putting round goby firmly on the seafood map.
