A platform to inspire sustainable food habits

Our partners in Vejle, the Culinary Institute by Vejle Erhverv, demonstrated at the Vejle Food Festival 2025, how large-scale public events can be used strategically to promote sustainable food habits and support behavioural change — closely aligned with KISMET’s initiatives, and in particular with one of the project’s core concepts: Promoting Sustainable Food Choices. Through concrete, taste-driven activities, the Culinary Institute activated public awareness around legumes as a delicious and climate-friendly staple in plant-rich diets.

One highlight was the debut of the “Vejle Hotdog,” developed by the local Young Food Talents, featuring legumes in both the bun and sausage, and adding flavourful vegetables to the sausages as well—a familiar format with a sustainable twist. Visitors also witnessed the final of the Great Bean Off, a community-based cooking competition celebrating the diversity and cultural relevance of legume-based dishes. A dedicated tasting station further inspired festival-goers by demonstrating how food leftovers can be transformed into appealing, high-quality meals.

These interventions align with KISMET’s campaign approach by making sustainable choices visible, accessible, and socially engaging. By involving youth, citizens, and local food producers, the Culinary Institute created a multi-actor experience that helped normalise plant-rich diets and reduce food waste—two key levers in the transition towards more sustainable food systems.
