A Round Goby cooking challenge

Our project partner Kalmar Kommun decided to find out and organised Round Goby cooking challenge during the annual sustainability week. Four public kitchen chefs were given four hours to compose different dishes with Round Goby.
The dishes had to appeal to both young and old and be suitable for a public kitchen or restaurants. A real challenge as none of the chefs had ever prepared or used Round Goby before in their cooking.
Marine Centre at Simrishamn Kommun together with Rosbergs Fisk prepped whole Round Goby into different raw produce, including fish fillets, smoked and minced Round Goby.
The results? A range of tasty dishes from the classic fried and breaded Round Goby fish to a delicious tartar. Overall, the chefs were positively surprised by both the taste and texture of Round Goby. With the right marketing and processing infrastructure, it could be become a sustainable alternative to our current fish favourites.
