
Pilot 7 - Develop new round goby food products for human consumption

Pilot 7 is all about developing new tasty round goby food products. It is also an attempt to facilitate the start-up of a local value chain for underused domestic fish that is not traditionally consumed. Although the product development will take place in Sweden, GMU together with the Port of Władysławowo will organize an awareness-raising event gathering relevant stakeholders to taste the different Round Goby products.

Method:
Together with chefs and smoking experts, our project partners and fish processing companies Skillinge Fisk and Branteviks Fisk will develop and showcase all kinds of round goby products: smoked whole fish, fillets as well as minced fish. The fish will mainly come from the test fishing done in Pilots 1-4 but bought frozen will also be used to ensure that there are enough raw materials for product development. The developed products will be tasted and showcased in local restaurants and fish shops. The products will also sent on to Kalmar Municipality for trials in their public kitchens.
Skillinge Fisk and Branteviks Fisk will also test the most suitable and cost-efficient processing machines to gut and mince the round goby. The plan is to use small volumes between 600 to 1 200 kg fish during three years. The minced fish will be used by our Swedish partners to develop a round goby product suitable for large-scale production, such as fish burgers. This will then be used in Pilot 8. Potential customers could be school kitchens and other public kitchens, via wholesalers. At same time SE partners will also try more small-scale product development with the minced fish, together with chefs and experts in smoking fish.
Progress (April 2025):
The project coordinators, Marine Centre Simrishamn bought frozen Round Goby from Estonia to secure enough raw material for our fish processing companies to develop new products. Skillinge Fisk and Rosbergs Fisk have tested filleting round goby with herring filleting machines to optimize processing. So far, it has prodced mixed results and all the round goby has so far been processed by hand. Both processing companies have, in cooperation with Marine Centre prepared round goby fillets, mince and smoked whole fish for Kalmar Municipality for their two outreach events. The first event took place in October where four chefs cooked up four round goby in a public kitchen. The second event took place live where stakeholders could try the different dishes. They also provided round goby served to the EU Commissioner Costas Kadis during his visit to Simrishamn and are collaborating with high-end restaurants such as Grand Hotel in Stockholm, providing round goby for a tasting event. Skillinge Fisk also attended Nordic Seafood Summit, where participants could try their “Branteviksgoby”, a modern take on the classic Swedish pickled herring dish.
